Pheasant Casserole and Sweet Potato Brownies
I had a weekend of cooking once again. On Saturday I made Sweet Potato chocolate Brownies. No, that is not a mistype. These are nutritious at the same time as being a 'cake.' A great lunch box snack for child or adult alike. Recipe here
We, I say we as Mr Him cooked a Pheasant casserole under my instruction.
4 Pheasant breasts, chopped
2 carrots chopped
2 leeks chopped
3/4 pint of cider
3 eating apples
a couple of teaspoons of fresh thyme.
In a casserole in the oven we cooked it for an hour and a half on 160c.
We accompanied it with cabbage.
I think parsnip would go well in the mix in future.
As well as cooking we found time to walk the dogs around our local reservoir and even visit the pub. A relaxing weekend was had by both of us. Blog here
